Breakfast Pie
We love to travel and visit new places. Many years ago, we stayed in a B & B in idyllic, Beaufort, North Carolina. We had the opportunity to have breakfast pie during our stay and liked it so much, decided to try our hand at it ourselves. Here is my recipe for breakfast pie.

Breakfast Pie
Ingredients:
1 frozen pie crust (thawed) or freshly made, your preference
1 c. milk
1 c. shredded cheese
1 tsp. mustard
6 fresh eggs, beaten
1/2 pound sausage
salt and pepper
Directions:
Preheat oven to 350 degrees. Prepare crust in a glass pie plate. I like to “dry” out my crust a bit in the oven for about 5 minutes. Let cool. While crust is cooling, fry the sausage and place on paper towels to absorb any excess grease. In a large bowl, add
milk, cheese, mustard and eggs. Crumble the sausage into this mixture.
Add salt and pepper. Now, pour all of this in to the prepared crust. Bake at 350 degrees for about 30-35 minutes until golden brown. I keep a watch on it, and if the edges of the crust are getting too brown, I place the pie crust shield on the pie to protect the edges.
Serve the pie warm with your favorite breakfast beverage. Garnish the plate with a serving of fruit for added color and nutrition.
