Egg Salad
at the desk! Brittany requested an egg salad sandwich, so this morning, before work,
I quickly prepared a batch for us.
This recipe is really easy and requires only five ingredients:
Eggs
Mayonnaise (we love Duke’s)
Apple Cider Vinegar
Salt
I steamed five eggs laid by our lovely girls. After they steam for about twenty minutes, add them to ice cold water. This makes them easier to peel. After they cool, peel and place in dish.
I like to mash them somewhat. We prefer it smooth instead of chunky. Add a heaping tablespoon of Duke’s, a splash of apple cider
vinegar then add a sprinkle of salt and pepper. Stir it all together! Now, my mama always told me to
taste to see if you need to add more of an ingredient. Do you like your egg salad
tart? If so add another bit of apple cider vinegar. Does it need a little more salt,
or pepper? Add accordingly. Now it is ready to spread between two slices of your favorite
bread, or to eat by itself with saltines.
Bonus! Take all those left over egg shells, break them into smaller pieces and feed them back
to your girls! They love them!
