Easy Salsa
This is the best salsa recipe I have found. You can change the ingredients up any way you want to based on what you have on hand, and still end up with a great salsa. For this recipe, I used all fresh ingredients- Fresh Tomato, Fresh Cilantro, but you can easily substitute canned tomato and dry cilantro in the winter months.
The Ingredients:
The must haves!
Tomatoes (Fresh or Canned)(Approximately 3-4 Medium-Large size fresh tomatoes)
(If canned 28 oz., whole peeled)

Onion- Not much, maybe 1/2 a medium sized
1 Can Rotel (Mild)( I only use 1/2 a can- this stuff is HOT)
Lime- juice and zest
Cilantro- About 1 Cup
Salt- 1/4 teaspoon
Sugar- 1/4 teaspoon
The ‘Can’ Adds
Garlic- Maybe 1/2, but I never add this
Jalepenos- 1 or 2, but I never add this
Sweet Baby Bell Peppers (The type that are in a bag with several colors, I chop up maybe 4 if I have these on hand)
The reason this recipe is so easy, is once you peel your tomatoes, and zest a lime, cap the baby bell peppers, everything just gets dumped into a food processor. The longer you pulse the processor, the more liquid type salsa you will have. I like mine runny, so I do it several times. At this point, if it is too hot, add more tomato. If it is not hot enough, add more rotel.
I absolutely love to make a cheese omelet and pour a tablespoon or two of this salsa over it! Yum!
