Japanese Fruit Pie
Do you ever get a taste for something that you had long ago? Sometimes we get a “hankerin”
for a dish, and just have to make it. Recently, on one of the many cold, wintry days we have
had lately, we decided to make such a dish. It is called Japanese Fruit Pie. I don’t know if
you have ever had it, but it so good. It just makes me think of times past, a pie that the lady
of the house may have made in the “old days”. You probably have the ingredients in your
cupboard, or freezer. It’s easy. I like easy!
Japanese Fruit Pie
Ingredients:
1/2 c. raisins
1/2 c. coconut
1/2 c. pecans
1 c. sugar
2 eggs
1 stick butter
1 tsp. vanilla
1 tbsp. vinegar
Directions:
Cream together butter and sugar. Add eggs and mix well.
Add the other ingredients and blend together. Pour into unbaked pie shell.
Bake at 350 degrees for
30 minutes or until firm.
