Taco Soup

We have been craving taco soup. It is such a comfort food! We’ve had a lot of  rainy days recently,

and I decided to make some. I know, it doesn’t sound healthy, considering all the canned

veggies it requires, but there are ways to keep it “healthier”.  Here is the recipe:

Taco Soup
Ingredients:
1 lb. ground beef (I used a lean ground beef)
1 pk. taco seasoning (low sodium, no msg or artificial flavorings)
1 large can diced tomatoes (all natural)
1 can pinto beans (fat free)
1 can kidney beans
1 can rotel tomatoes
1 can corn
Sour cream (for garnish) (it was also all natural)
Salsa (for garnish) (organic)
Shredded cheese (for garnish) (all natural)
Tortilla chips (to eat along, or for dipping)
Directions:
1. Brown ground beef and drain
2. Add taco seasoning
3. Put the following ingredients into a large pot or crock pot:
    beef with seasoning, diced tomatoes, pinto beans, kidney beans, rotel, corn
4. Cook on medium heat until hot. I put everything in the crock pot on low, until
    I get home from work! Ladle the soup into a bowl, garnish with shredded cheese,
    sour cream and salsa. Don’t forget the tortilla chips!
